Shrimp ala Arrabbiata

This my recipe for Shrimp ala Arrabbiata.

1 lbs shrimp fresh or frozen
3 tbsp fat: oil or butter
2-3 cloves of garlic chopped or minced
1/4 cup tomato sauce or paste
2 tbsp Italian seasoning
to taste crushed red pepper flakes
to taste salt and pepper

First heat your oil in a nice saute pan big enough to hold your shrimp.  Add your garlic and cook until you can smell it.  Once the garlic is aromatic, add your shrimp.  If using frozen shrimp, you don't have to thaw them out as long as they are loose.  Cook the shrimp until they are about 80% cooked (most are pink with some still translucent).  Add your Italian seasoning and tomato product.  If using fresh shrimp use tomato sauce.  If using frozen use tomato paste.  The reason for this is that frozen shrimp release water that will dilute the tomato paste.  If you use tomato sauce, it would become too watery. You basically want just enough tomato to coat everything.  However, if you'd like the shrimp more saucy, use more tomato.  Add your seasoning and your red pepper flakes, depending on how spicy you want it.  Just keep in mind that a little goes a long way and you can always add more, but can't take any out.

This is nice toss or served over pasta.
